Pass the (healthy) Pasta!

I love pasta! But then again... who doesn’t?
There’s often a stigma surrounding pasta about how it's classified under the dangerously addictive unhealthy foods category. However, the pasta itself is essentially made of wheat and it’s how much of it you actually eat and what you pair with it that will make or break your diet.
It’s not often that I have extreme cravings, but I was pretty unwell the other day and all I could think about was a bowl of piping hot chewy pasta… drool. SO, drowning in the sweat of my fever (gross I know!), I dragged myself to the kitchen and decided to cook up some healthy pasta! I decided to get creative and made myself an AVOCADO and MOZZARELLA RIGATONI!!
I thought that it was only right for me to share this delicious recipe with the world, so get ready to have your mind blown by some clean rigatoni…
RECIPE : AVOCADO AND MOZZARELLA RIGATONI


Ingredients:
Dried Rigatoni (eggless) *you can also substitute this for chickpea pasta or brown rice pasta
Half an avocado; cut into cubes
Quarter of a pack of light mozzarella cheese
100ml skimmed milk (or any other sort of milk)
Half an onion diced
1 tsp garlic paste
1 tbsp olive oil
1 tbsp salt
Pinch of paprika
Pinch of black pepper
How to:
1. Boil the pasta for about 10-15 minutes until soft
2. Take a pan and heat, add olive oil, onions and garlic and sauté until slightly brown
3. Add in the pasta, followed by the mozzarella and milk; add in the salt at the same time
4. Wait for the milk to boil away, and then add in the cubed avocado
5. Sprinkle paprika and black pepper and mix everything well
6. Once everything is mixed well and you start to smell the goodness, empty the pasta into your bowl and dig in!
