Zesty Zoodles

When you think of vegetables you’d want to eat, what comes to mind? Probably potatoes, corn and… well thats about it really, isn't it?
My brother absolutely loathes vegetables (barbaric, I KNOW!), so being the veggie lover that I am I set out to come up with a way to make a vegetable dish that was interesting and tasteful enough for him to enjoy.
I opened up the fridge and I saw in the vegetable basket a Zucchini. Now how in the world was I supposed to make that interesting or even remotely ‘delicious’ for my primarily meat eating brother???
Then it hit me. I recall scrolling through Instagram to see people using ‘spiralisers’ to make ‘noodles’ out of vegetables. So I grabbed the Zucchini and attempted to use my grater to make ‘zucchini noodles’, or known in the health food world as ‘zoodles’.
I took the zoodles, cooked them up, and served it as a side with baked lemon chicken.
And the verdict? Let’s just say I rarely see my brother enjoying a side of vegetables, and in this case he was pretty impressed!
So, here’s the Zoodles recipe that even my carnivorous brother approves of…
RECIPE : STIR FRIED ZOODLES


Ingredients:
Medium-sized zucchini
Half a red onion
Garlic paste
Olive Oil
2 tsp Salt
2 tsp black pepper
2 tsp paprika
1/2 tsp cumin seeds
1/4 fresh lemon juice
How to:
Wash your zucchini thoroughly and cut off both of the ends. Take a spiraliser or a grater (both work, though the best aesthetic is achieved with a spiraliser) and make your ‘zoodles’. Cut up half a red onion and dice into thin slices.
To a heated pan, add olive oil, garlic paste and onions. Stir fry until slight browning of onions is visible. Then add in the cumin seeds.
Add in the zoodles, followed by salt, paprika and black pepper.
Squeeze in the fresh lemon and mix well
Plate your zoodles as an accompaniment with grilled chicken, grilled salmon or even tofu.
